How do I clean my griddle?

Why are there flakes chipping off of my Pane Bella?
There is a buildup of carbon is caused from the oils that are used.  This is not uncommon and may be necessary to chip the carbon off if the griddle surface has not been cleaned regularly.  Please refer to the Maintenance & Cleaning section of your Operations Manual – page 28 - http://www.langworld.com/lang_cd/Operate Manuals/GRIDDLE/pb.pdf
Why does the fan in my new GCSF oven stop and go the other direction?

Can you change ovens from 1 phase to 3 phase (and visa versa) and how do you do it?
All Lang ovens use a very simple process to change from three phase to single phase operation.  All operation manuals have a conversion table on the wiring diagram in that manual which shows wire interconnections for 3 phase and 1 phase connections.  Click link to operation manuals.
What is my model number?  Where can I find the SN tag?

What is the status of the Equipment order?
An order confirmation “receipt of purchase order” containing a summary of the order as well as projected ship date will be faxed or emailed to your company the day after the order has been entered (excluding weekends).  Please note we can only send these confirmations to one fax number or one email address.Please call 800-807-9285 if you need to change the fax # or email address.      A shipped confirmation will be faxed or emailed to your company the day after an order has shipped (excluding weekends).  The shipped confirmation contains all of the important information about your order including the PRO (tracking) number.
